As an avid lover of baking and food, I have a few recipes that I cannot live without. I thought I would share. Some of these are my own, some are not, and some started out as someone else’s and I made them my own.
Chicken Spinach Quiche
Not my own recipe, but a recipe I couldn’t live without. I LOVE IT! I use real mayo with olive oil (I think Kraft makes one) to cut on the calories. This quiche is 260 calories per slice (8 slices per quiche) if made with the olive oil mayo. It takes some time to make, but is worth every second. Even Arwyn loves it.
Cinnamon Sugar Chips
This is a simple and generic recipe, but always a hit. I make them to serve with Fruit Salsa(see below) or just as a snack. Everyone loves them.
Large flour tortilla
Sugar/Cinnamon mix
spreadable margarine
Spread tortillas with a very thin layer of margarine on both sides
sprinkle cinnamon/sugar mix on both sides
Cut into chips with pizza cutter
Cook at 400 for 8-10 minutes
Fruit Salsa
Again, not my recipe. I got it from my pastor’s wife who got it from someone else, who probably got it from someone else. Anyway….
1 large apple (Granny Smith or Gala)
2 kiwi
1/2 lb strawberries
Dice all fruit and combine in bowl. Add a little bit of brown sugar and a few tablespoons of OJ. Serve with Stacy’s Cinnamon and Sugar Pita Chips or the recipe I posted above.
Best Breakfast Biscuits Ever!
LEGEND….wait for it……………….DARY! These are the best biscuits ever. I almost hate making them because I know I cannot stop eating them. I have no idea how many calories are in them and I don’t care. I love them with gravy, honey, or apple butter. Delicious!
2 cups flour
1 tblsp baking powder
1 tsp sugar
1 tsp salt
Combine and stir
Put in 1/3 cup + 2 tblsp of shortening and mix with a pastry blender. Once the shortening is coarsely ground into the flour mixture, add 1 cup of milk. Stir together and let sit in fridge for 1/2 hour. (Letting sit isn’t absolutely necessary, they just rise more that way) Knead the mix 20 times on a floured surface and roll out into a thick dough with a rolling pin. Keeping the dough thick is important. If you roll it out too thin, the biscuits will be wimpy. Cut biscuits out and cook for 12ish minutes at 400. Makes 6 biscuits. Oh so divine!

I didn’t know you watched HOW I MET YOUR MOTHER! I just stared watching and haven’t laughed so hard in a long time. Did you all recommend it to Henry? Maybe that’s how we got our hands on it. If so, thanks! I love that show! Just started season 2.
